Best darn banana loaf ever! - hmmmmmm

Banana Loaf / Bread is one of the easiest recipes to master as it is very forgiving.

The most important ingredient is very ripe bananas. It's needs to be mushy and almost fall apart in hands but it must not be rotten of course.

Ingredients
  • 1 1/4 cups of sugar (310ml / 280gm) or 250gm + 2 desert spoons of honey
  • Optional - 2 desert spoons of Organic blackstrap molasses 
  • 1/2 cup of butter or margarine (softened) (125ml / 160gm) 
  • 2 eggs
  • 3 to 5 medium ripe bananas
  • 1/2 cup of buttermilk (125ml) (the secret ingredient)
  • 1 teaspoon of vanilla
  • Approximately 2 1/2 cups of all purpose flour (625ml) 
  • 1 teaspoon of baking soda (needed for buttermilk otherwise use baking powder)
  • 1 teaspoon of salt
  • 1 cup of roasted nuts (any kind) if you want
  1. Pre heat the oven to 180c / 350f and grease a standard loaf tin.
  2. Mix the sugar and butter and cream the mixture thoroughly using a fork and then whisk in a smaller mixing bowl.
  3. Add eggs, bananas, buttermilk and vanilla and mix sequentially with a mixer or whisk until the sugar is dissolved and mixture is smooth.
  4. Sieve the flour, baking soda, salt and nuts in a larger mixing bowl and mix thoroughly.
  5. Combine the wet and dry and mix well.
  6. Pour batter into the loaf tin and let settle.
  7. Place into the oven, middle shelf, and bake at 180c for 15 minutes.
  8. Reduce temperature to 160c and bake for 60 minutes. 
  9. Stick a toothpick into the middle and make sure it comes out clean
  10. Leave in the pan for a few minutes and turn out to cool
  11. Simples!
Push nose right against the banana loaf and suck in the aroma. hmmmmmm, nice!
