Ray's famous Potato Salad

  • Skin and cut 1or 2 potato's (salad potato) per person + 1 or 2 extra into
  • big chunks par boil for about 10 minutes with some salt.
  • At the same boil 1 egg per person for 5 minutes and cool in cold water.
  • Drain potatoes in cold water and place in a large mixing bowl or not if using white potato as that is all that was available.
  • Add at least 350 ml of mayonnaise with a bit of milk to dilute.
  • Stir carefully. Slice eggs and add and add salt to taste.
  • Add a tin of super sweet sweetcorn after draining the water.
  • Add a chunk of cubed cheddar cheese and half a pack of cherry tomatoes.
  • Grind some black pepper into the mixture.
  • Add the rest of the tomatoes on top and sprinkle some grated mozzarella cheese and dig in!

Probably 2000 calories per serving but hmmmm!
