Perfect and easy Macaroni and cheese


Macaroni and cheese - Ray style

This recipe is for 2 hungry people. 

Ingredients
  • 250gm elbow macaroni 
  • 1 egg
  • 3 tomatoes 
  • 1 cup of milk
  • 200ml evaporated milk
  • 200ml cream 
  • 2 tablespoons butter, melted
  • 2 tablespoons of virgin olive oil 
  • 250gm or more cups shredded Cheddar cheese 
  • salt and pepper to taste
Directions
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish. The Ikea small serving dish is perfect. 
  • In a large pot of salted water, lightly boil the macaroni for about 6 minutes until half-cooked.
  • Drain water and sprinkle some salt and olive oil and shake well. transfer to the glass serving dish and stir to ensure nothing is stuck. 
  • Whisk the egg, cream, evaporated milk and milk together in a large measuring cup. Add butter and 3/4 of the cheese to the egg and milk. Stir well. 
  • Transfer to the pot you boiled the macaroni in and bring close to boil continually stirring. Do not get distracted as a momentary lapse in stirring will give you grandma lumps. When the consistency is gloopy remove, taste and pour into the serving dish. 
  • Sprinkle the rest of the cheese on top and cover with tomato. Add more cheese :-)
  • Bake uncovered, for 30 to 40 minutes, or until the top is brown. 
So simple and yet so good.
